English Abbeys in valleys

Just visited Rievaux in Yorkshire, the site is in a valley as is Fountains and the sites are undeniably sheltered but surely they would be subject to fogs and low-lying fogs and so not very healthy.

The position of the abbey would be influenced by a nearby water supply (hence river valleys) and as you said, a sheltered area. Also, what's so unhealthy about fog?
