The history of Cambodia (especially the khmer rouge's rise and fall) have been a subject of great interest to me, but unfortunately there don't seem to be any relevant mentions on the booklist. While biographies rather than scholarly history books, I've already read First they killed my father and Survival in the Killing Fields, but for the most part I've found myself dead ending. A few titles have popped up, but I'm honestly not sure where to start.
As a sort of sidenote, I'm very interested in any books on Cambodian folklore - First they killed my father mentioned a bodiless witch monster which piqued my interest.
Any recommendations at all for places to start would be appreciated.

Have you read any works by David P. Chandler, Ben Kiernan, and Milton Osborne? Do you happen to read French? That will open up your possibilities quite a bit. Some titles outside of the above authors' work:
