I cannot answer this unequivocally, however I can tell you that Helen Cripe's "Thomas Jefferson and Music" does have an Appendix which lists and annotates all the music manuscripts in the Monticello Music Collection. If you can get a hold of this list (from this book or elsewhere) I'm sure that would narrow down some favourites and a general idea of his musical taste.
