If you happen to speak French, 'Les États-Unis et l'islam' by Yves-Henrit Noualhait (who I've never met) and Sylvie de la Foye (who was one of my professors, and is a brilliant woman) touches on this issue with great clarity. It isn't as in depth as many other sources, as your question is tangential to the topics covered in this resource, but I would still highly recommend it both as a tool for addressing your particular concerns and even more so for providing an understanding of the modern complexities of the Israeli-Palestinian conflict.
The book does not focus solely on the US and Islam, despite the title; that's a reflection of the publisher's wishes. It's an in-depth study of the origins of the modern Israeli state, and the reasons for the geopolitical situations in the Near and Middle East.
I haven't been able to find it in English, sadly, but the information contained in it is well worth it: Mme de le Foye conducted numerous interviews with some of Israel's founders, so her perspective is to be cherished, in my view. She is both frank and sincere in her assessments of Israel and Palestine, and I can't recommend this book highly enough.
