That's a pretty broad question, but one thing you could cite as a good example is regarding medical practice and theory, seeing as their great hospitals were often attached to mosques, both in the sense that they were one big building, like with the great mosque of Cairo, and in that the financing of them came through religious tithe. Most of their basis was translated greek/byzantine stuff as I know, but their was a bit of development in diagnosis and record keeping regarding how they used their adopted knowledge.
