This isn't directly on point, since mortals aren't directly involved, but in the Prose Edda, the Norse gods are permanently killed at Ragnarok. Some of their offspring return to the old homes of the gods to pick up the pieces, but the original gods themselves are gone for good.

Other interpretations think of Ragnarok as a rebirth cycle instead of an end-times apocalypse, but at least in the Prose Edda the main pantheon of Norse gods are killed for good.

A qualified yes. Yi, a legendary mortal archer of ancient China, killed 9 of the 10 suns in the sky with his bow and arrow, leaving only 1. The legend goes that the 10 suns were the children of the heavenly mother goddess. She bathed them everyday and let 9 suns rest on the lower branches of the great tree while a solitary sun took turns to play on the top branch that is the sky each day. It worked out well until one day the suns decided they would much rather play as a group on the top branch. Well, the world burned, the crops died, people were miserable. Yi, the great archer who had already slain many monsters, took action and shot down 9 suns. The suns turned into a cluster of feathers upon being struck by an arrow and died. The single remaining sun was so frightened that it hid itself, bring total darkness to the world. The other gods including his mom finally coaxed him out of hiding and all was well again. The suns were not all powerful gods, more like god babies, or even godly baby birds what with feathers and nesting on trees and all.
