I've been fascinated with them for a long time and am considering building a scale model recreation. I haven't had any luck finding relevant literature.
While it won't cover all of history Joseph and Frances Gies' Cathedral, Forge and Waterwheel: Technology and Invention in the Middle Ages is a good place to start. You can usually get a second hand copy really cheap from a well known internet shop that shall go unnamed.
