Some American soldiers served in WWII, Korea, and Vietnam, but this is only possible due to the time frame in which the war was fought. Do we know how any career soldiers in other time periods who fought through several different wars?

Yes, many. USMC Major General Smedley Butler served in various actions from 1898-1918, including the Spanish-American War, Philippine Insurrection, various colonial actions, and WWI.

US Army General MacArthur served in WWI, WWII, and Korea.

Marine General Peter Pace served in Vietnam and OEF/OIF (he served during Desert Storm but did not deploy to theater).

It was probably easiest to do during WWII, Korea, and Vietnam because if timed right, you hit could all three in about 20 years which is about the maximum duration of military career in the United States.
