The late James Deetz in his important and easy-to-read book, In Small Things Forgotten (1977), has an excellent chapter on the evolution of grave iconography on Puritan-era tombstones in New England. Angel and skull/death faces became stylized over time. This appears to be in keeping with his treatment of the subject - it appears to be a stylized representation of a skull or angel.
