Then we have the knickers and leggings, which would be trunk hose of different kinds over regular hose.
So the poofy shirts ... are doublets that show the shirt through slashes?

You can find a pattern in Hill & Bucknell, Evolution of Fashion which a seamstress can resize, but just look for the style in patterns for Renaissance Faires. If you don't want it sewn custom (I'd recommend an historical tailor), there are Ren Faire suppliers pret-a-porter. Hill&Bucknell is good to tell you what sort of fabrics and colors are right.
Remember "fashionable simplicity" is an invention of the 20th C. In the Ren, simplicity = poverty. Only too much is enough!
