I was under the impression that Muslims were referred to as Saracens while it was only the Ottomans/their Muslim subjects that were referred to as "the Turk"?

Riding on OP's question, did the medieval Europeans distinguish between and have different terms for the Sunni and Shia (aside from their label)?
