When and why did people start drinking water with gas?

Talking about it in chemistry that its an acid, how in the world would people think about drinking it in water. "oh i got this acid, lets put it into water and drink it" Confuses me

(for the Americans: by "water with gas" I believe OP means what we'd call "fizzy water" "soda water" or "carbonated water." I know my family found this phrasing confusing on a trip to Europe.)

Effervescent (carbonated) springs occur in nature. The best-known ones are the French one at Les Bouillens (source of Perrier), the Italian San Pellegrino, and the Bad Neuenahr, Germany, source of Apollinaris.
