The Roman rank and file didn't typically wear plumes into battle. You must be thinking of either the transverse crest that Centurions wore, or the plumed helmets that higher level officers are often depicted with. In both cases, it made sense for officers to be easily identifiable in battle, so men could follow orders, rally, etc.
