Of course. I'm most familiar with the sources post-Arab conquests. Perhaps the two most famous are the History of Tabari (full title: History of the Prophets and Kings) , which is actually a world history of the lands of the conquest from The Creation until his own time. The English translation is in 39 volumes. Tabari was an ethnically Persian historian writing in Arabic in the 9th/10th century. He's arguably the best regarded historian of his time.

What might be more readable, and certainly devotes more focus to the topic you're interested in is the Shahnameh of Ferdowsi, which is a poetic epic of Persian history which remains to this day the "National Epic" of Iran.
