I've been able to find quite a lot of secondary sources, such as Eric Dursteler, ed., A Companion to Venetian History, that cover general, but I'd really like to find sources that delve into how different types of Jews were treated. [Italian, Sephardic and Ashkenazi Jews].
Any help would be massively appreciated.

Where have you been looking? Do you need primary sources or just academic sources more focused on the Jewish experience? This subject heading seems to have a lot of good stuff.
Look at the footnotes in The Familiarity of Strangers as well as the bibliography of Benjamin Arbel.
For an English-language "primary source" I recommend A Treasury of Jewish Letters (1953) edited by Franz Kobler, two volumes. It's not a very common book, and you may need to use ILL or find a specialty library.
Jewish Women in Historical Perspective also has a chapter on the Jews of Italy and their customs.
Other books you may find useful, although with a slightly later focus than you asked for:
Acculturation and Its Discontents: The Italian Jewish Experience Between Exclusion and Inclusion (2008) edited by by Myers, Ciavolella, Reill, and Symcox
The Jews of Early Modern Venice (2001) eds. Ravid and Davis is only a little bit dated, but has some really first-rate essays. It's mostly looking a little bit later than the period you are interested in, but I think you should take a look at it anyway since most of the really good primary sources by and about the Jews of Venice are post-1500.
