Are there any estimates of how many people were crucified in Judea by the Romans (including during Herod's rule)? What about the number of Jews or Christians, both in Judea and elsewhere in the Empire?
I don't know any exact numbers from their whole occupation of Judea, but I know a little bit.
During the First Jewish-Roman War, during the siege of Jerusalem, any Jew caught fleeing the city would be crucified. Max Dimont cites that it wasn't uncommon for 500-ish Jews to be crucified a day during the siege.
Remember that the siege of the city lasted one year. Also keep in mind that there were two other Jewish wars against Rome in the next 100 years. While I don't know how many were crucified during these later revolts, I do know entire communities of Jews (Judeans) were killed in every major city or town in the region.
