Eugene Rogan's The Arabs: A History is a great book on the creation of pan-Arab nationalism, that begins with Arabs under Ottoman rule through to the present day.

As has already been mentioned, Ilan Pappe is very good although I would never use the word "objective" in his writings--he has one book called The Ethnic Cleansing of Palestine, so he doesn't exactly attempt to hide his biases. Again, though, his books are still very good as long as you account for those biases.

I'd also recommend Benny Morris's Righteous Victims: A History of the Zionist-Arab Conflict, 1881-2001

"A History of Modern Palestine" by Ilan Pappe gives the history of Palestine to 1948 then the history of Israel and Israeli-Arab conflicts. It's as objective as it gets and isn't shy about revealing the faults of both sides.
