Royal houses are traditionally like surnames -- the children inherit that of the father, hence Edward VII, George V, Edward VIII, George VI and Elizabeth II are members of the House of Saxe-Coburg and Gotha. SCG was changed to Windsor during World War One because of anti-German sentiment.

The reason the House will stay that of Windsor for Charles, et al, is because that's what the Queen decided in 1952.
