I always recommend Jonathan Spence's Search for Modern China when it comes to Chinese history 1800-today.

Check out the book list in the sidebar. I read the Fairbank book listed there a few months ago and it was very good, although speeding through the first few thousand years in about 250 pages means you only get a pretty brief overview, but he starts to go more in depth by the 19th century.
