How could the UN command be against the Chinese in the Korean War if China was part of the UN?

The Republic of China (Taiwan) represented China at the UN at that time, not the People's Republic of China (Mainland China). The PRC became the representative in 1971. If someone wants to fill out exactly how the chronology of the Nixon/Kissinger negotiations with the Chinese government brought that about, that would be great (I don't have that answer at hand).
