Was being Aryan in Nazi Germany more to do with the genotype or the phenotype? Would it matter if I was a blonde, blue eyed non-German race? Or if I was a brown haired, brown eyed, well tanned purebred German?

For your question, how would they have been able to determine the genotype of an individual? Anger sequencing was not developed until the 1970s. On top of that, there are multiple genes that contribute to eye color, none of which would have been known prior to the advent of sequencing.
