Michael Shermer has a wonderful handbook, Why People Believe Weird Things, that debunks many conspiracy theories and such. The biggest one, as you would expect, is holocaust denial. He has about half the book dedicated to absolutely laying the case on every source of denialist garbage, their true intentions, and then another big chunk on just flat out evidence and citations of the act itself.

It's cheap on amazon and it's my personal "dealing with holocaust denial" handbook. It's not a collection of primary sources but he cites from them.

All major sources are mainly based in Archives until now, digitalisation is going on slowly. So if you want to really see most sources, you would have to stick to the usual historiographical literature, look at the archvial signatures in foot- or endnotes, go to the Archive and order the file.

There's a major still ongoing editorial project in Germany, which seems to be basically what you're looking for: "The aim of the document collection “The Persecution and Murder of the European Jews by Nazi Germany, 1933–1945” is to publish a comprehensive range of central sources on the persecution of Jews during the Nazi period. Additionally, the edition can be seen as a written monument to the murdered Jews of Europe."

It consists of 16 volumes and is yet not finished, an english translation is on it's way.
