I've been all over amazon and my local trusted book store and cannot seem to find anything. The closest I've gotten was a terrible 100 page study guide "accessory" by someone who has now since been put into question by scholars. Any help would be appreciated.
I'd actually be happy with any books on him, and especially college level textbooks. I unfortunately don't know enough Japanese to make use of the hundreds of books in the native language.

I don't know of any english books focused ONLY on Nobunaga, but Osprey has two books about Samurai commanders, don't know which one has Nobunaga in it right now, I have to look into mine when I'm back home.
Other than that, the Samurai archives Website may be of some help for you.

You can try "The Chronicle of Oda Nobunaga." It's a translation of a... well, chronicle-written by one of his retainers. Please note that as such there will undoubtedly be significant exaggerations and historical inaccuracies, as aside from the obvious bias that one would assume a loyal vassal to have when writing about his lord, Nobunaga actively cultivated a reputation of fear and and bloodthirstiness because it suited his goals.
Japonius Tyrannus by Jeroen Lamers is probably the big English language book on Nobunaga; it's mainly a political history, so it's somewhat light on biographical details and battlefield microhistory, but it sounds like it fits the bill for what you're looking for.
I wrote a paper on Nobunaga a few years ago and found some interesting sources, but most of them were individual chapters or segments of books about the whole process of unifying Japan at that point and didn't focus solely on Nobunaga. This PDF is a translation of parts of the Meishogenkoroku by Okanoya Shigezane that might hold some interest to you. It includes stories about Nobunada, Hideyoshi and Ieyasu.
