This varies vastly based on civilization, and often differs in the various religions practiced. However, one of the more interesting uses of eclipse, in my opinion, are the Assyrians of Mesopotamia. They incorporated eclipses into a system of documenting dates in what is called the limmu lists.

This is fantastic from a historians perspective because using these limmu lists and the provided documentation about the eclipses they used to describe (mostly military) events, we have exact and reliable dates.
