How come so much land during the Baltic Crusades was controlled by monastic orders such as the Livonian Sword Brothers or the Teutonic Knights compared to other crusades in Iberia or the Levant?

They were strong secular powers and demanded that not all land be given to weaker theocratic entities like the Archbishopric of Riga and the three bishoprics. Basically the Livonian Brothers of the Sword was the army for these bishoprics, at least during the Livonian Crusade itself. The bishoprics had barely any troops of their own.
