When did Europe start to use primarily Greek and Latin words for taxonomy?

I am guessing it was in the early 1700's during the rise of classicist's. Was Gottfriend Leibniz the guy who started the trend?

You're almost right on the money. In 1753, Carl Linnaeus published Species Plantarum, the first book to classify plants using a binomial name rendered in Latin.

EDIT: Why Latin? It just seemed to be his language of choice for communication and being the first, he set the convention for others to follow. Born as "Carl von Linné" in Sweden, he enrolled for university using a Latin translation of his own given name, that name being "Carl Linnaeus".

Side-note, I don't know of any Greek taxonomy names.
