Simon Montefiore's "Jerusalem: The Biography" is pretty recent and a fun read. Largely anecdotal history but pretty comprehensive, and a lot of material on the crusader and muslim eras.

Dominique Lapierre and Larry Collins' "O Jerusalem" is a very very detailed account of the city during the Israeli war of independence.
