Why did rice become somewhat of a staple food in the Middle East, when the Middle East is one of the most arid places on Earth?

Rice takes a lot of water to grow, and a lot of water to cook. How did it become popular in Arabia, Persia, Lebanon, North Africa, etc.?

Wheat, lentils, and chickpeas are more popular crops there, but why did rice become adopted at all?

As an add on, where did the rice come from? What influence did the Mesopotamian marshes of Iraq have on this?
