It's a lower elevation... Saxony is further south yes, but it's higher up in elevation because the alps are to the south of it. Think of the Nile in Egypt as a good comparison

The name came from the geographical height of the landscape rather than it being north or south on a map. It's the same reason the Netherlands, Belgium, and Luxemburg are called the Low Countries.
