What is "Seotch" nationality and where can I find out more information about it?

My family in the mid 1800s in Quebec stated their nationality as Seotch and I can't find any information on Seotch, aside from a mentions of it in books from the 1800s.

Are you sure it's not a misspelling (or misreading) of Scotch? It's an archaic term for people of Scottish descent. Replacing an 'c' with an 'e' is a pretty common issue with the OCR used to scan old books. I'm not aware of Seotch being used anywhere else, and this is a pretty simple explanation for that omission.
