How did Catholicism manage to evolve from its brutally violent past into the much more moderate incarnation we know today?

I would challenge your assertion that Catholicism had a "brutally violent past." And by Catholicism I'm assuming you mean the Roman Catholic Church as an entity, rather than its theology and dogma. And by brutally violent past I'm guessing you mean the Crusades and the Inquisition specifically?
