When did sailing reach the tipping point when families would travel overseas to move, for vacation, or business? What did it take for that to happen? And then the same question for airplanes. When did traveling by air become a reasonable non-crazy way to travel?

This question needs to be made region or culture specific. We know the Minoans of crete trade and traveled regularly around all of the eastern mediterranean almost 9000 years ago but at some point before that they must have successfully settled Crete. So in Europe at least the answer with regards to sailing is "It predates recorded history".
