i think you need to narrow down the question a lot.

the middle ages are a thousand years stretching from spain to Afghanistan.(if you include various powers that ruled over parts of europe)

you can talk about water mills in france or you can talk about qanat(a type of canal to bring ground water to the surface) in iran.

technology (or science) and religion are not really in conflict and especially not when it is in the form of practical tools, rather than theoretical models for the universe's beginnings.

there are very few technological taboos from religion that i can think of, but there are many taboos relating to status and class that would effect techology,
