western depictions of crusaders are well known, from reliefs to miniatures etc.
What about local, Muslim or Christian, depictions of them?
Are there any surviving depictions of them in the Middle East that were not done by the crusaders themselves?

Sure! You might try Philip Hittis's An Arab-Syrian Gentleman and Warrior in the Period of the Crusades: Memoirs of Usamah Ibn-Munqidh (Kitab Al-Itibar). It's been a while since I've read it myself - about all I really remember is that he wishes the Franks would bathe more - but it provides a long and detailed account of a fairly high-ranking Muslim's interactions with and understanding of the crusaders.
You could check the Damascus Chronicle, I suppose. You may have difficulty finding depictions, given the status of representational art in the Islam of the time.
