Speaking for middle ages, it depends how you define armor. If shields are in there, then yes, wood is absolutely crucial, if shields aren't armor, then wood wasn't used. Some decorative items were made of it, and things like scabbards had wood in them, but wood wasn't used to actually protect the one wearing armor.
