Why were so many buildings and monuments built with copper as a prominent feature, despite the fact that it changes colors over time? Why not use a material that is more consistent for things like statues and steeples?

Many of us have heard the anecdote that the Statue of Liberty's exterior is actually untreated copper, which developed a layer of the green patina over time. Did the designers of the monument intend this effect?
How long did it take for the Statue of Liberty to rust green? Are there any pictures showing, or writings describing, its original bronze?
