I'm a cheesemaker living in the age before the discovery of bacteria, what do I believe causes my milk to solidify into cheese?

Bacteria make different cheeses taste the way they do, but curdling (the part where the solids separate out from the liquid whey) happens because of enzymes (rennet) or an acid. So you wouldn't really need to understand bacteria to know how to make cheese.
