This is an enormous question as the historiography for this topic is extremely rich!

A good start would be Jonathan Riley-Smith's The Crusades which covers the origins of armed penitential pilgrimage from its inception in the eleventh century to 1798. It's a very readable monograph that is accessible to non-specialists; try to get the second edition from 2005. Sadly this great historian recently passed away, but his contributions to the field will endure for a very long time.

Andrew Jotischky's volume Crusading and the Crusader States published in 2004 offers some good discussion of both the Crusades, Latin Christian settlement in the Levant, and [then] contemporary historiography. He also discusses how colonial and de-colonial intellectual trends shaped historical interpretations for scholars in the early to mid twentieth century.

If you are looking for something more recent I would strongly recommend Asbridge's The Crusades from 2010 or Phillips' Holy Warriors from 2009. Both attempt to provide a bit more texture and action to their narratives and include numerous interesting anecdotes that you may find compelling.

Christopher Tyerman is also a major scholar in this field so you may want to consult his volume God's War from 2006. He provides a very interesting perspective and famously questioned whether there were any Crusades in the twelfth century whatsoever.

I've personally been reading Thomas Asbridge's The Crusades, and while I'm no expert, I'd agree with the wiki that it's very readable. It's helped me understand the situation far better than I had before.

I would suggest "How to plan a Crusade" made by Christopher Tyerman. Its a really good book about overall the Crusades and how much planning went into them etc.
