Probably the most readable recent recounting of the war is in Russell Shorto's book The Island At The Center of the World which details the Dutch era of New York.

You may also want to check out Narratives of New Netherland which contains several primary sources translated from the original Dutch that recount what happened during the war from people who were there (or talked to people who were).
