These manuals typically only cover dueling, so they may not be quite as accurate for how fighting was done in battles, but with your analogy to boxing, this seems more like what you're looking for. It should also be noted that in that case, the shield was, to my understanding, not something common in a dueling enviroment, the most you would have is a buckler or parrying dagger, and all this depends on when and where you lived.
Now I can't say if different styles emerged contemporary to one another, but over time, the way people fought obviously changed, in adddition to change over location.
