In all the Greek versions I see it as γνῶθι σεαυτὸν which doesn't match up with the mosaic. I can't find any information about what 'cayton' means or what language it is in.
It's because CAYTON is σαυτον. c is a form of sigma, it's the equivalent of σ. Y is also just upsilon (υ, Υ). The epsilon is contracted into the αυτον here.
No mystery at all here.
