Do you mean melee as in close combat, or as in mass combat (ie a mêlée)? If you mean the first, there are a few fencing treatises by masters that survive, such as Johannes Liechtenauer, Fiore dei Liberi, as well as some un-named treatises that date to the 14th century, and are used by HEMA (Historical European Martial Arts) practitioners to reconstruct the forgotten martial arts of Europe.

I don't know of any that describe the latter, at least in the middle ages.
