Given the nature of WWI, I assumed they'd want the war to end as quickly as possible. And given I've heard stories of small skirmishes that resulted in death leading up to hours before the treaty was signed and the ceasefire commenced, it seems like once they came to the terms of the treaty they'd go ahead and end the war.
But the 11:11 11/11 thing almost makes it seem like they were trying to time it right to make the date more memorable, and I can just imagine the Germans, Austro-Hungarians, and the Turkish there just wanting them to get it over with.
Versailles was signed in June 1919. Are you thinking of the Armistice instead? If so that was signed previously, to come into effect at 11am on November the 11th.

Also to clarify. The armistice on the Western Front on 11/11 did not involve the Turks. They had signed the Armistice of Mudros on 30 October which ended hostilities at noon on 31 October.
That armistice was then flagrantly violated, with the British moving on to capture the city of the Mosul. The Turkish garrison at Medina wouldn't surrender until 1919. And with the outbreak of the Turkish war of independence, fighting effective didn't stop until 1922/3.
