Why did the British not stop the partition day violence in India?

There is no evidence that they expected the violence. Even one the violence began, the bulk of the security forces available to them were locals, not whites, and so their reliability in intervening neutrally would have been questionable. Britain's experience the previous year with near mutiny amongst Indian security forces over attempted prosecutions of Indians who fought for the Nazis and Japanese showed that Indian troops would not unquestionably follow orders.
