Not exactly an expert but know a little bit. In the year 1200 a new Daoist sect has emerged that took over the Daoist scene in northern China know as the Quan Zhen or the School of Complete Reality/Completely Real founded by Wang Chong Yang and his seven disciples (The Seven Realised Sages). This school focuses heavily internal cultivation of meditation and internal exlir. This is a drastic change from the visualization and external alchemy techniques practiced by the Shang Qing or Ling Bao Daoists of the 4th century.
Here is an explanation of what Completely Real means from a 13th century text "Analyzing Doubts and Pointing at what is Unknown".

Question: What is Quan Zhen (Completely Real)?
Answer: It is is when a single thought yours has yet to sprout. Before the sprouting of a thought it is the same as Tai Xu, if you look you cannot seen its colour, listen but not hear its sound, touch but not feel its form,on top it as no roof, on the bottom it has no floor, on its side no door, straight no body,so large it has no outside, so small it has no inside, hard to calculate, hard to understand, no body, its uses are not none, still and not moving, feeling and it slowly moves, it encompasses the ten thousand things, it does does cling to even a string of silk. I do not know its name, its word is Quan Zhen. Buddhists called it Perfect Enlightenment。 Zhuang ZI says:“Some held that at first there was not anything. This is the extreme point, the utmost point to which nothing can be added”
或问曰:即尔之一念未萌之前也。夫一念未萌,等同太虚,视之不见其色,听之不闻其声,搏之不得其形。其上无盖,其下无底,其傍无门,其正无体,其大无外,其小无内。杳冥莫测,恍惚难明,体之非有,随用不无,隐大无外,藏微有馀。寂然不动,感而遂通,包含万象体,不挂一丝头。吾不知其名,字之曰全真。释教谓之圆觉,又云圆空。太上所谓混成,又云圆通。故《南华经》云:未始有物者,至矣尽矣,不可以加矣。此之谓欤。
This Quan Zhen sect developed from the inner alchemy that became popular in the Tang Dynasty from the influence of Buddhism, a text known as the Cang Tong Qi the first inner alchemy text to be written and of course the dangers from the consumption of external alchemy. In addition, the Northern Complete Reality School incorporated Buddhism into their teaching and 2 of their main scriptures were the Diamond and Heart Sutras and they held the slogan "The Three Teachings Are One" (Daoism, Buddhism, Confucianism).
Although the Zheng Yi sect which was formed from combination the original Celestial Masters, Shang Qing and Ling Bao sects may still bare resemblance to the 4th century Daoists but again external alchemy became much less practiced and I believe a focus on Thunder Magic which is another practice that requires heavy inner cultivation. But these Zheng Yi Daoists would still follow the tradition of heavily focusing on rituals and Fu Lu or Talismens.
Difference between a peasant and rich intellectuals or upper class individuals known as Shi Da Fu would be most importantly the ability to read obviously. Richer members of society would have been more likely to understand the teachings of Daoism through reading Dao De Jing, Qing Jing Jing or Zhuang Zi due to their ability to read, also delve into alchemical classics and learn the teachings from the Daoist Monks and masters themselves. However, most people; farmers and peasants would have likely kept their beliefs to praying to Gods and whatever the local Daoist Monks may teach them. (The rich intelectuals would have also worshiped the gods not saying they didn't).
