A lot of Escobar's assets were seized by the Colombian government. Some of them were turned into public attractions - like his private zoo Hacienda Nápoles which is now a themepark.
However, he invested a lot of his money in the people around him. He set up companies to give his friends jobs, worked on a lot of infrastructure in and around Medellín, and created his own paramilitaries. ( https://newleftreview.org/II/44/forrest-hylton-remaking-medellin )
My favourite example is ex-president Álvaro Uribe who has links to the Medellín cartel, through his father who was Escobar's lawyer, later Uribe worked as CEO for a company that organized Escobar's travel. So, you can say that the legacy of Escobar's fortune is in Uribe's presidency and continued political career. (NSA archives mentioning this: http://nsarchive.gwu.edu/NSAEBB/NSAEBB131/ )
