I think it would be important to narrow your question to a particular profile of POW and to a particular country as the answer will otherwise run too great a gamut to answer. Treatment of POWs ranged from:

• The British commander at Kut spending the rest of the war in a series Turkish villas on the Sea of Marmara.
• His men (many of them Indian) suffering in horrible conditions with incredible death rates
• German prisoner of war camps for entente Muslim soldiers where the Germans used good living conditions and propaganda in an attempt to turn them into double agents willing to wage jihad.
• The Armenian genocide and related atrocities by partisans on both sides, including Armenian partisans fighting for the French in the Franco Turkish War which was really an extension of the conflict into the 1920s.
• British recruitment of Arab Ottoman soldiers from POW camps into the Arab revolt, e.g. Nuri al-Said.

And so on. So I don't think it would be possible to generalize.
