Why do we speak of the Fatimids and Ayyubids (Sultanate of Egypt), but not of the Capets and Valois (Kingdom of France)?

This also seems to apply to Asian dynasties (Ming, Tang). And some exceptions: Habsburg Empire, Mughals, Delhi Sultanate, Mamluk Sultanate

I do not understand the question. Do you mean the characterization as a "sultanate" vs. "kingdom" vs. "dynasty" or do you mean the amount of interest and/or discussion?
