Any suggestions at all would be fantastic. I'm particularly looking for memoirs from Polish agricultural workers and any memoirs about the Nazi birthing centres for foreign women. Thank you!
You might try browsing the footnotes in Halik Kochanski's The Eagle Unbowed: Poland and the Poles in the Second World War. It's the most comprehensive and balanced take on the subject that I know of (I asked our WW2 experts for the recommendation), she used interviews/letters/memoir type sources extensively, and it's a fantastic (if gut-wrenching) book to read in general.
