How did people know where to mine in the middle ages?

How did people know where to mine in the middle ages? Or even before then? How did they know what they would pulled out of those mines would be suitable for weapons?

This is not an answer but a follow-up question: I've heard that metal was gathered in mud. By heating the mud metal would come out. Wouldn't they just mine were the mud contained the most of the best metal that seeped out? How did they distinguish/split metals? I've also heard right now mines are 40-60% pure, and that before the industrialisation this percentage was much lower. How pure were mines in general?
